Let me just start by saying that Yoko Ono's new album is actually really quite good. (We put it on during work today because Kelly and I were both curious about it. There's a lot of great names on there with her.)


Other than that? I was kinda sick yesterday. That sucked. :\ Also, Björk is every bit as good as people told me she would be. Damn. Now I have a new discography to collect. Luckily, she only has like 5 CDs or something.



Hush. If you don't know almost my whole life is music by now, when will you learn?



Oh. And I need to make muffins tomorrow. Maybe something with pineapple and cherry. Though we only have marachino or candied cherries... I guess we'll see.

Because today's baking experiment truly was a success:


Gnutmeg's Pina Colada Muffins

½ cup margarine or butter
¾ cup brown sugar
1 tsp. rum extract
1 egg
1 tsp baking powder
1 tsp baking soda
½ cup shredded coconut
400ml can of pineapple chunks, drained
1/3 cup apple sauce

Cream sugar and butter together. Add rum extract and egg, beat until light and fluffy. Add pineapple, applesauce, and dry ingredients. Mix gently until dry ingredients are just moistened. Place in greased muffin tins (about ¾ full) and bake at 350ºF for about 20~30 minutes until lightly browned. Optional: sprinkle coconut on top of muffins before baking.
