1 can chick peas, drained and rinsed
1/2 cup "hickory" smoked almonds, chopped
5-6 spears of asparagus, blanched, chopped
1/4 cup quinoa (I used red quinoa), cooked and cooled
1 apple, chopped (I used red delicious)
1 clove garlic, minced
2 tbsp chipotle powder
2 tbsp lemon juice
1/8 cup sesame oil
1/8 cup olive oil
salt & pepper to taste
Basically, you mix all of the above together in a nice sized container and let them sit a while so the flavours mingle. This definitely was a "crap, I need protein, crap, what's in the fridge" invention. I actually didn't add any salt or pepper to mine, since I thought the almonds would have had enough, but I ended up wishing I had! Otherwise, this was quite nice. Made a nice side for the meat-eaters I was with, too. :)
